Making soba noodles in Ueda no sato is unique because the ingredients originally come from Uonuma region. In our workshop the ingredients are :
1. Buckwheat flour
2. Funori (a type of seaweed)

Prepare the ingredients

Mix the funori and the flour in the bowl

Knead it until forming as a ball

Flatten the dough. Do not forget to sprinkle the buckwheat flour over the cooking board before

Fold the dough into a square shape

Cut the dough
